In the heart of Loughton, you can experience the best of everything at Tom, Dick & Harry’s. It is divine, intimate and stunning. What made you decide to open a restaurant?
I’ve always been a big foodie, and always loved trying different delicacies from all over the world, and I wanted to see if the things I discovered would work in a restaurant of my own. Added to this, I’m a big fan of the right environment, the right buzz, and being served by the right staff. It creates an atmosphere that makes the whole experience fantastic, and I wanted to see if I could achieve this.

What is the meaning behind the name Tom, Dick & Harry’s?
The name has so many different meanings. It quite simply means ‘anybody and everybody’. The phrase was first used in a Shakespeare play, and has since been used in songs, films and clothing brands. Its most famous appearance was in the film The Great Escape, where the three secret tunnels were code named ‘Tom’, ‘Dick’ and ‘Harry’. When we set our first company up, 17 years ago, we code named our escape from the corporate world as Tom, Dick and Harry. We promised to use it one day in the future for a new venture so I suppose what it really means in the end, is ‘everyone’s welcome’.

What is your favourite dish on your menu?
Wow! I have so many favourite dishes. I’m told, and can confirm, that Tom’s Burger is the best you will find anywhere in the world. The slow cooked ribs are a must, and the dropped ice cream is fantastic. However, the TDH Sunday roast to share at the table is my favourite. You choose your whole joint and carve it yourself and serve the whole thing family style. With a do it yourself Bloody Mary, a large bottle of rose wine and our pianist playing in the background, it’s just fantastic.

What makes Tom Dick & Harry’s so special?
We have the largest selection of rose wine in Essex, everyone of them light and dry and mainly from Provence. We make the best cocktails, in a great atmosphere particularly on a Friday and Saturday night with live music. Our food is all prepared on the premises, and we are proud that the Michelin Guide picked us as the best restaurant in the area.

Tell us about the best night you’ve had at Tom Dick & Harry’s.
We once had our own single table for 40 people, to celebrate my daughters 21st. Christmas Eve is always fantastic, with carol singers and Father Christmas and a good old singsong around the piano.

What is your number one holiday destination?
There’s nothing better than sailing around the coast of Majorca with family and friends.

What advice would you give to someone thinking about opening a restaurant?
Think very very hard and then think again!

Who, or what, is the love of your life?
My family.

What is your must have piece of equipment for the kitchen?
My Grandads set of butchers knives and our log burning pizza oven.

How has the restaurant business changed within the last few years?
I think you can forget the last few years and concentrate on the last few week. It has changed and will remain changed beyond all recognition, however people love to be entertained, love going out, and love good food, so I’m sure it will all come back even stronger.

What’s the one piece of advice you would give to your 20 year old self today?
Do everything, take every opportunity and then do it all again.

What is your favourite cocktail?
It has to be a very spicy, strong Bloody Mary to nurse a hangover before Sunday Lunch.

Tell us about your love for Rose in particular.
A good very very light rose served cold, conjures up fantastic memories of very long lunches or exciting evening meals sitting in the sun with family and friends.

What would you like to say to your loyal customers and staff?
I would like to say thanks for all of your support over the last two years. The best restaurants need the best staff and the best customers. Who are all intent on having a great experience and I can’t wait to see you all soon!
